Macaroni Salad  Enjoy a serving of Macaroni Salad at your next picnic feast!

What picnic wouldn't be complete without home-made macaroni salad?  Light, filling and oh so easy to go down, this recipe can be altered to suit taste (we omit the onion and peppers).  Make sure to put your bowl of macaroni salad on top of a bowl of ice to keep it from spoiling.  Enjoy!

4 cups cooked macaroni
1 cup sliced celery
1/2 cup sliced scallions
4 Tbl coarsely chopped green pepper
2 Tbl chopped red pepper
2 Tbl finely chopped parsley
1 cup mayonnaise
2 Tbl vinegar
1/2 tsp ground pepper
Salt

Combine macaroni, celery, scallions, green pepper, red pepper and parsley in a large bowl; toss to mix.  In a small bowl, mix the mayonnaise and vinegar together until smooth.  Add to the macaroni mixture.  Add pepper and salt to taste and mix well.  Refrigerate several hours before serving, adding more mayonnaise if needed.
