Blueberry Molasses Cake

 

The combination of fresh Blueberries and molasses, along with a touch of spice, makes this cake an enjoyable treat for dessert or breakfast.  Enjoy!

2 tsp baking soda
1 cup hot water
*******************
1 cup sugar
1 cup oil
4 eggs
2 cups molasses
*******************
4 cups all-purpose flour
2 teaspoons salt
2 tsp cinnamon
1 tsp ginger
1 tsp allspice
1/2 tsp cloves
*******************
3 cups fresh (or frozen) blueberries


Bring water just to boil and add baking soda.  Set aside.

In a large bowl whip together the sugar, oil, eggs, and molasses.  In a separate bowl, sift together the dry ingredients.  Add the dry ingredients to the molasses mixture alternately with baking soda dissolved in hot water.   Add the blueberries and pour into a greased 12X16-inch sheet pan.  Bake in a 325 oven for 2 hours or until the cake tests done.

Serves 12 to 16
