SWEET POTATO PIE   Sweet Potatoes

Sweet potato pie says southern dessert all the way.  Creamy, sweet and comforting are combined to give you a masterpiece at the end of your meal.   Just a dollop of sweet whipped cream will send you into ecstasy!  Enjoy!

4 medium sweet potatoes
2 eggs
1 cup sugar
1 tsp vanilla extract
Pinch of salt
1/2 tsp ground nutmeg
1/2 cup butter (1 stick)
1/2 cup evaporated milk

1 unbaked 9-inch pie shell


Boil the potatoes until soft, then peel and place them into a mixing bow.   Beat until there are no lumps remaining.  Add the eggs, sugar, vanilla, salt, nutmeg, butter and milk; beat until creamy.

Pour into pie shell and bake in a 350° oven until crust is brown.
