Old Fashioned Scalloped Oysters     Scallop Shell

 

This dish graced the Thanksgiving Table at my Aunt Vera's house at various other times throughout the year; but always Thanksgiving.  Even those (like myself) who do not like Oysters the flavor of the crackers are wonderful.   Enjoy!

2 pints fresh oysters
8 Tbl melted butter
1 Tbl lemon juice
2 cups saltine crackers, crumbled in large pieces
freshly ground black pepper
1 pint half and half
1/2 tsp salt
1/3 tsp Worcestershire sauce
1 tsp sherry

Preheat oven to 350°.

Drain oysters, reserving liquid.  Mix butter and lemon juice and pour over crackers, tossing to mix.  In a greased baking dish, layer 1/3 crumbs, half oysters, 1/3 crumbs, remaining oyster, sprinkle oysters lightly with pepper.  Combine the reserved oyster liquid with enough half and half to make a cup.  Stir in salt, Worcestershire and sherry.  Pour over oysters.  Top with remaining 1/3 of the crumb mixture.

Bake 30 minutes or until thoroughly heated.
