Oyster Stuffing       Boy and Turkey

 

In New England, and elsewhere, folks enjoy the flavor oysters can add to their stuffing.  You'll find this recipe a moist and flavorful crowd pleaser.   For an even more moist dressing, add 1/4 cup chicken broth.  Enjoy!

1/4 pound butter
4 Tbl finely chopped onion
4 Tbl finely chopped celery
4 cups dry bread crumbs
2 cups oysters, cut into bite-size pieces
1/4 cup of oyster liquor
1/4 tsp freshly ground pepper
Salt to taste

Hornofplenty.WMF (11132 bytes)Melt the butter in a skillet and stir in the onion and celery.  Cook over low heat until the onion is soft.  Add this mixture to the bread crumbs and toss lightly with the oysters and liquor.  Season with pepper and salt.  Stuff turkey, goose or your favorite bird and cook according to the bird's instructions.  When done, remove stuffing immediately and keep warm.
