1/2 cup chopped onions
1/4 cup butter (1/2 stick)
2 tsp curry powder
1 cup uncooked rice
1 cup orange juice
1 cup chicken broth
1 tsp salt
1 bay leaf
In a heavy saucepan sauté
the onions in butter until soft. Stir in the curry powder and rice; cook and stir
two minutes. Add the remaining ingredients and stir with a fork. Bring to a
boil, lower the heat, cover and simmer 20 minutes. Remove bay leaf.
Serves 6
