Uncooked Fudge Fudge

This extremely easy recipe makes a fudge that will melt both in your hand and your mouth.  Enjoy!

8 oz. unsweetened chocolate
2 Tbl butter
1 egg white (beaten and frothy)
1 pound confectioners sugar, sifted
3/4 heavy cream

Melt unsweetened chocolate and butter in top of a double boiler.

Beat egg white to a froth.  Add confectioners sugar and gradually add cream.   Mix well to creamy texture.  Add chocolate/butter and continue beating.   Refrigerate until set.
