Just in time for the pork roast, here is some creamed spinach.  Cooked until tender, not soggy, your spinach will be lauded across the lands.  Enjoy!

Wash 2 lbs. spinach very thoroughly through several cold waters; if necessary wash each leaf to remove all dirt and debris.  Put spinach into 3-qt. saucepan, add 1 1/3 cups boiling water and 1 tsp salt and cook 5 to 10 minutes or until just tender, turning occasionally.  Drain thoroughly.

Add 1 cup thick White Sauce and 1/2 tsp white pepper.  Fold gently together well and sprinkle top with nutmeg.  Serve at once.
