Cream of Wheat
Pancakes

Pancakes with a bit of texture is what I call these wonderfully cereal/flour flapjacks.  An alternative to the usual breakfast fare, the crunchiness of the cream of wheat sets these pancakes apart.  Enjoy!

1 cup pancake mix
1 cup plus 1 Tbl cream of wheat
1 1/3 cup milk
1 Tbl confectioners sugar
2 eggs
1 Tbl vegetable oil

Combine pancake mix, confectioners sugar and cream of wheat in large bowl.   Beat eggs with wire whisk in separate bowl.  Add milk and oil to eggs; whisk well.  Add wet ingredients into dry ingredients.  Stir very well.

Pour onto hot griddle and cook until bubbly, turn and cook until golden brown.
