Chili Con Queso
(Chili With Cheese)

An excellent dip for tortilla chips or your favorite cracker.  Adjust the "fire power" by the amount of green chilies you include.  Salud!

1 onion, finely chopped
2 Tbl mayonnaise
1 2-pound box Velveeta® Cheese
1 8-ounce can evaporated milk
1 8-ounce can green chilies, diced

In a medium saucepan fry the onion in the mayonnaise.  Add the cheese slowly until melted.  Add the milk and then the chilies.

To reheat, place in a double boiler and heat slowly.
